Environment
All Extreme Management Center platforms
Procedure
Edit the "/usr/local/Extreme_Networks/NetSight/appdata/NSJBoss.properties" file.
vi /usr/local/Extreme_Networks/NetSight/appdata/NSJBoss.properties
Add up to (2) of the following (3) lines to disable the desired protocols.
deviceEntityCache.useEdp=false
deviceEntityCache.useCdp=false
deviceEntityCache.useLldp=false
Restart the Extreme Management Center Server Service.  
Additional notes
The "Network Monitor Cache" is a process which runs every (12) hours and refreshes the data from all previously discovered devices.  Currently, there are no GUI configurations of the Network Monitor Cache. Adjusting it's behavior requires the editing of the "NSJBoss.properties" file.  By default, the above parameters are "true". So, in practice, to narrow the Network Monitor Cache refresh to (1) of the (3) methods only requires the addition of (2) "false" statements to the "NSJBoss.properties" file.

For the example of only using LLDP, the following would be added to the file:

deviceEntityCache.useEdp=false
deviceEntityCache.useCdp=false
