Why on my AP Dashboard are there are gaps in the data on the Throughput and Unique Client Count?

Answer
Breaks in data

This is perfectly normal representation as seen by the AP. When the AP has no clients all of its reports simply stop and show the time of no data and will then pick back up when clients connect.
