Answer
Each hour  Analytics stores data for the top 100 applications:
It stores data for the top 100 applications based on byte count.
It stores data for the top 100 applications based on flow count.
It stores data for the top 100 applications based on [worst] response time.
Etc. Etc. 

However, for Application-Client data (which is data for a specific client using a specific application) Purview only stores the top 100 clients for each of the top 100 applications based on byte count.

The reason for this is that a large amount of disk space is being used for the above information already.
